T G Green Vintage Souffle Special Celebrations Serving Dish/Bowl Gresley England

The Special Celebration Souffle recipe is from a vintage baking dish produced by T.G. Green, a well-known English ceramics company, and is part of their Epicure oven-to-tableware line.  The recipe text on the dish is a recipe for a sweetened chestnut soufflé and can be read as follows: Special Celebration Souffle Melt 1 oz. of butter in a pan. Stir in 1 oz. flour. Add 1 pint milk and boil, stirring gently. Remove pan from heat and cool slightly before beating in, either by hand or using an electric blender, the yolks of 3 large eggs. Stir in an 8 oz. tin of sweetened chestnut puree together with one tbs. brandy. Fold in the stiffly whipped whites of the eggs. Transfer the mixture to this dish and cook in a hot oven (400°F) for 15-20 mins. Serve at once with cream.   Box #50
